To keep your horses in top notch shape and fresh to perform, they should go to bed before 10pm to get a decent night’s rest. (Advice we should probably all follow :p)

At latest, you can still bed you horses down until midnight, but no later than that. After midnight, it’s impossible for him to perform any actions.
